MAKE YOUR OWN CHEESE
Cheese mongers should gather at Bayview School of Cooking (516 W. Fourth Ave., Olympia) at 5:30 p.m. Tuesday, Sept. 16 to take the hands-on instructional course, "Make Your Own Cheese." Mark Solomon, a Seattle-based cheese maker, guides participants through every step toward making seven soft cheeses: mozzarella, ricotta, lebneh (yogurt cheese), quark, cream cheese, chèvre and mascarpone. Afterward, participants can nibble on his or her own cheese with a fresh caprese salad. Complimentary wine pairing is included to boot. The cost is $65, which includes instruction, hands on opportunities, wine, bites, ingredients, cheese education and details about great sources for info, supplies and equipment.
